move the fields up a bit - just nudge them up. This usually works.

Depends. If you are talking about data fields then yes "tweaking" the size can make the difference (do it in "Customize Forms". If it is logo's then make sure you have Quicktime installed on your computer (I am not sure whether that applies to Mac's). If you are getting wrong currency indicators then there may be a software patch you are missing.
I have noted that with the Hong Kong version of MYOB Premier all most of the pdf problems go away if you use Adobe Acrobat rather than Adobe Reader.

If you just make the fields larger than the text contained within them they will appear. If the fields are small enough to just block one pixel of the text, it wont display any of it.
