I've noticed I have some old, open invoices.
I wonder if I can delete them without causing any problems.
Does anybody know?

You will want to find out why these invoices are still open. Are they invoices for which the customer did not pay? In that case, you create a credit memo (a negative invoice) and allocate it to bad debt. If you simply delete the sales - they can only be from your current fiscal year. Deleting the sales will of course impact your income on your P&L and reduce your Receivables on your Balance Sheet,
